Sam's Parlour sits in the basement of Old Fashioned Sam's — Dublin 2's three-storey cocktail house at 19 Montague Street. A quiet room, low light, and a bar built around the craft of drink-making.

The list is short and rotated often. Signature serves built from scratch with fat-washing, clarification, and infusion. Classics poured properly. A whiskey selection deep enough to disappear into.
No menu theatre. No flair. Just a room that asks you to slow down.


BEHIND THE BAR
How the drinks get made.
Technique-led, never gimmicky. The Parlour's bar team draws on methods more often seen in restaurant kitchens than Dublin bar wells.

Fat-Washing
Texture, depth, mouthfeel.
Spirits infused with rendered fats — brown butter rum, sesame oil mezcal, bacon-fat bourbon — for a silk-thick body you can't get from sugar alone. Strained cold and filtered clear.

Clarification
Visually transparent, fully flavoured.
Milk-clarified, agar-clarified and centrifuge-clarified serves. A piña colada the colour of water that still tastes like the islands. Drinks rebuilt from the inside out.

House Infusions
Made in-house, never bought in.
From seasonal cordials to bespoke bitters. Every syrup, every shrub, every vermouth blend made on-site. The bar acts as a pantry — the list reflects what's in.
